The honest answer to how much water a vegetable garden needs is: somewhere between zero and a hundred gallons per square foot per year, depending on what you are growing, where you live, and how you have set things up.
That is not a helpful answer, so we are going to give you a much better one. After six seasons of running drip-metered raised beds with a flow meter on the spigot, we have learned what the actual numbers look like for a typical home garden. This is the cheat sheet we wish we had on day one.
The baseline number to memorize
The single most useful number is this: most vegetable gardens need approximately one inch of water per week during the growing season. That includes both supplemental watering and rainfall.
An inch of water across a 4-by-8 raised bed equals roughly twenty gallons. Across a typical 10-by-20 in-ground vegetable garden, it is about a hundred and twenty-five gallons. Across the same area for an entire growing season (twenty-four weeks), that is three thousand gallons total.
That sounds like a lot. With mulch, drip irrigation, and roughly half coming from rainfall, the supplemental water bill across a season is typically twelve hundred to two thousand gallons. For most homes this is meaningfully less than a single short summer driveway power-wash.
Adjustments by crop
Not every crop wants the same amount. Below are the rough water expectations for common vegetables, expressed as weekly inches during peak growth.
- Tomatoes, peppers, eggplant: 1.0 to 1.5 inches per week, consistent moisture critical
- Squash, cucumbers, melons: 1.5 to 2.0 inches per week during fruiting
- Lettuce, spinach, kale: 0.75 to 1.0 inches per week, stop watering before harvest
- Root vegetables (carrots, beets, radishes): 1.0 inch per week, consistency matters more than quantity
- Beans, peas: 0.75 to 1.0 inches per week, less during flowering
- Garlic, onions: 0.5 to 0.75 inches per week, reduce sharply before harvest
- Corn: 1.5 to 2.0 inches per week during tasseling and ear development
- Herbs (basil, parsley, cilantro): 0.5 to 0.75 inches per week, more during heat
Adjustments by season
The same garden has wildly different water needs in different parts of the year. The one-inch baseline is for peak growing season (June through August in most northern climates). Outside of that, the math changes.
In cool spring weather (April, May), most vegetables need half an inch per week. Cool soil holds moisture much longer, and plants are still small. Heavy spring watering can actually delay root development.
In late summer heat waves (above ninety-five degrees), water needs spike to one and a half to two inches per week for most vegetables. Mulch and drip become essential rather than optional in this period.
In autumn cool-down (September, October in northern climates), water needs drop back to half to three quarters of an inch per week as growth slows.
How to actually measure
You have three practical options for measuring how much water reaches your beds. We have used all three.
- The tuna-can method: place an empty tuna can in the garden during a watering session. Time how long it takes to fill the one-inch mark. That becomes your standard run duration.
- The flow-meter method: a $15 spigot-mounted flow meter shows gallons used. Multiply gallons by area to get inches. Useful for hose users.
- The depth-probe method: after watering, push a screwdriver into the soil. It should slide easily six to eight inches down. If it stops at four inches, water more next time.
When watering more does not help
Past a certain point, more water actively hurts the garden. Saturated soil starves roots of oxygen, encourages fungal disease, and leaches nutrients. The symptoms of overwatering look superficially similar to drought stress (yellow leaves, wilting) but require the opposite response.
If your garden is receiving more than two inches per week and still looks unhappy, the answer is not more water. It is drainage, soil structure, or a pest issue. Stop the additional watering and investigate.
A useful weekly check
Once a week, walk the garden in the cool of the morning and ask three questions. Are any plants visibly wilting before the sun has touched the bed? Does the soil two inches down feel cool and slightly damp, or dry and dusty? Has the rain gauge collected meaningful precipitation in the last seven days?
The answers tell you almost everything you need to plan the upcoming week of watering. The longer you do this, the less you need to consult a schedule. The garden tells you.
One inch of water per week is the answer for most vegetable gardens most of the time. Mulch, drip irrigation, and a useful rain gauge turn that knowledge into a system that mostly runs itself. The variables are real but the baseline is reliable.
Reading wilt: the gardener’s most useful skill
Plants wilt for two completely different reasons, and learning to tell them apart prevents most over-watering accidents. The first is genuine drought stress, which shows up as wilt that persists into the cool of early morning before the sun has touched the bed. This wilt warrants immediate deep watering.
The second is heat stress, which appears in the hottest part of the afternoon and disappears as the air cools toward evening. The plant is not actually drought-stressed; it is transpiring faster than its roots can supply, even with adequate soil moisture. Heat-stress wilt requires no watering response. Heading out to water a bed that is heat-wilted at 3 p.m. risks over-saturation if you cannot read the difference.
The simple test: come back to the bed at 7 a.m. the next morning. If the wilt is gone, it was heat. If it persists, it was drought. With practice you stop second-guessing because you learn what your specific plants look like at each stage. By the third season most gardeners watch the morning state, not the afternoon, and adjust watering accordingly. This single shift in observation prevents more crop problems than any irrigation schedule alone.
